I have found that gassers always fly and feel faster in the air. This is because as you unload an electric motor as the plane picks up speed, the motor makes less and less torque (until it hits the KV*voltage value). An electric plane will hit an invisible wall trying gain more and more speed with a low-pitched prop. A gas motor, however, continues making torque as the RPM picks up. So with a lower pitched prop, the gas motor will pull harder at speed.
If you go to an ES pipe your CG likely won't change much. The header will weigh about the same as the muffler and the pipe is roughly distributed along the CG. You will get more power and be much quieter, though.
