Hard maple. I still have several pieces of Thomas the Train track that I absconded when my kids got older. It is very nice maple.

Yes or for classic pattern planes, etc, I use them for wing bolt receptacles.

1/4" dowel?

Yes I've used 1/4" dowels, make them on the lathe. A few of the dowels end up junk as the small drill will follow the grain. Glue in with thin CA. I make them 1/2" long an cut off with flush cut saw after gluing.
